Living in the UK or USA where people from various countries and communities reside, a lot of people tend to go for Indian cuisine and Chinese special fried rice, but people forget that you can make healthy Naija Jollof rice or Fried rice which is a popular food in Nigeria. So I thought to write this article to teach people an easy step by step on how to make Nigerian fried rice.
INGREDIENTS:
Chicken stock
½ cup carrot
Onions (chopped)
¼ Green bell pepper
½ Green Peas and green Beans
2 chicken stock cubes
½ Teaspoon Thyme/rosemary
½ Tablespoon curry powder
2 ½ tablespoon cooking oil
1 cup liver[diced]
½ sweetcorn
DIRECTION:
Pour the chicken stock in a saucepan, add some water [just enough quantity to soften the rice], add curry, thyme, seasonings, and salt to taste. Leave it to boil.
When it has boiled, wash the rice, and add to it [no need parboiling the rice], cook until the rice softens but still firm as we don’t want the rice to overcook.
Get a pan, add some cooking oil, pour the chopped onions, green bell pepper, green peas, and green beans. Add the chopped carrot, add salt to taste, seasonings, curry, and thyme/rosemary. Put the heat on medium as we want it to slowly cook, add the precooked liver and allow it to simmer for about 2minutes then add to the cooked rice.
- Pour your sweetcorn, liver, green beans over it and stir to combine thoroughly.
- Allow it to simmer for few minutes
- Continue to stir as it fries
- Turn off the cooker when it’s ready
- Serve with any meat of your choice, Chicken, or turkey.
